Pork Roast with Apples and Onions Prep Time: 15 Minutes  |  Cook Time: 2 Hours  |  Difficulty: Easy  |  Servings: 8 Ingredients 3 Tablespoons Olive Oil 1 whole Pork Shoulder Roast (I used about 3.5 lbs boneless pork ribs) Salt And Pepper, to taste 4 cups Apple Juice 1 cup Beef Stock 3 whole Apples, Cored And Cut Into Wedges 3 whole Medium Onions, Sliced 1 whole Bay Leaf Preparation Instructions OPTIONAL: Saute onions until brown. (Or you may just add them raw to the roast.) To make the pork roast, heat olive oil in a large pot over high heat. Salt and pepper pork roast, then sear on all sides to give it some color. Reduce heat to low. Add apple juice, apple slices, onions, and bay leaf. Cover and simmer for 3 hours. (Or you may place in a 300 degree oven if you prefer.) When the roast is done, remove the roast, apples, and onions to a platter. Raise heat to medium-high (to high) and boil liquid, reducing it until thick and rich. Spoon thick sauce over the roast, then cut the roast into slices. Serve with apples, onions, and wild rice. (I recommend mashed potatoes) (Note: add fresh thyme or rosemary to the roast before cooking if you have it on hand!) To prepare meal from freezer, defrost overnight in fridge. Heat pork and apple mix in oven until warm. Meanwhile heat apple gravy in pot on stove, wisking vigorously to reincorporate the fat. Pour gravy over hot meat and potatoes.

Chicken Drumsticks and Split Pea

Okay, so I have some catching up to do! Here is the basis of my Split Pea Soup recipe, but i didn't put in celery stalks, I added potatoes and added carrots. I also used one or two bay leaves.

For my baked Parmesan Chicken Drumsticks:

Mix together 1c breadcrumbs, 1/2 c parmesan, generous salt and ground pepper. Remove skin from drumstick, dip in egg whites or butter (I used egg whites this time.) then roll in the dry mixture. Freeze. Pull out and put in a glass pan, drizzle melted butter over top, and bake in preheated oven at 375 degrees for about an hour, until the juices run clear. I like to put some whole potatoes in (poke with a fork!) at the same time, and then they are done at the same time.

White Bean Chili

Heat some oil in pan and add:
1 lb cubed chicken (I shredded it, and it was about 8 chicken tenderloins)
1 chopped onion
Saute for 10 minutes and set aside

14 oz. chicken broth
2-15.8 oz. cans of great northern beans
2-4 oz. diced green chilies
1 1/2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried oregano
*Bring to boil and add chicken and onion. Simmer 30 minutes.

Add:
8 oz. sour cream
1 cup whipping cream
Top with monterrey jack cheese

Garden Spaghetti

  • 1 lb spaghetti or 1 lb fettuccine
  • 2 tomatoes , diced ( canned diced tomatoes work)
  • 1 green pepper , seeded and diced
  • 1 yellow onion, diced
  • 2 zucchini , diced
  • 6 ounces sliced black olives , drained
  • 1/4 cup olive oil
  • 3 tablespoons parmesan cheese
  • 2 teaspoons minced garlic
  • 1 teaspoon basil
  • salt and pepper
  • 1 1/2 cups cooked ground turkey, (optional)

  • simmer sauce until veggies are soft, then serve over cooked pasta!

    Chicken & Brocolli Stuffed Crescent Rolls

    12 ounces cooked chicken, chopped (2 cups)
    1 cup broccoli, chopped
    1/2 cup red bell pepper, chopped
    1 garlic clove, pressed
    1 cup sharp cheddar cheese, shredded
    1/2 cup mayonnaise
    2 teaspoons All-Purpose Dill Mix (or 1 tsp. dried dill weed)
    1/4 teaspoon salt
    2 packages refrigerated crescent rolls
    1 egg white, lightly beaten
    2 Tablespoons slivered almonds

    Mix chicken, broccoli, bell pepper, garlic and cheese.  Add mayo, dill mix, and salt.  Mix well.
    Spread out crescent rolls, fill with mixture, fold over edges ( you can make a loaf rather than individual rolls).
    Brush with egg whites; sprinkle with almonds

    For Loaf: Cook 375 for 25-28 minutes or until golden brown.
    For Rolls: Cook 375 for 11-15 minutes or until golden brown.

    Tuscan Flat Bread

    1 T. yeast
    1 T. sugar
    2 c. warm water
    4 c. flour
    2 t. salt
    2 t. crushed rosemary
    ½ c. melted butter

    Dissolve yeast in sugar and warm water, let sit for 2-3 minutes.  Add flour, salt, and rosemary and mix.  Dough will be sticky so spray hands with non-stick spray before handling. 

    Put dough in greased (I like to use butter flavored Crisco) cookie sheet, spread out flat, then cut into breadsticks.  Cover and let rise 30 minutes.  Pour melted butter over dough.  Bake at 400 for 20 minutes.

    Freeze in gallon freezer bag.  Heat single breadsticks in microwave for approximately 30 seconds. Dip in olive oil and balsamic vinegar.  Yum!

    Sloppy Joes

    3 lbs lean ground beef
    1 c chopped onion
    3 cloves garlic, minced
    1 1/4 c ketchup
    5 Tbsp Worcestershire
    1/4 c brown sugar
    3 Tbsp vinegar
    3 Tbsp prepared mustard
    2 tsp chili powder

    So this is the recipe as written, but I made a few modifications. I added less Worcestershire (because I didn't have quite enough), more brown sugar, more ketchup, and some water.

    You probably know the drill for heating the frozen "muffins", but basically you just stick them in the microwave on 50% power for 3 minutes or so. Stir and warm again until hot.
