Aromatic Noodles With Lime Peanut Sauce

Here, here Beka!  I think we will all be experimenting a little these first few months!

Well, if you like Thai peanut sauce you'll love THIS vegetarian pasta dish from the Food Network.  Hope it's not too different for folks! 

Just a few notes about it:
  • The sauce will never freeze completely solid because it has rice vinegar in it, and apparently vinegar doesn't freeze (who knew?). 
  • Just thaw and heat under hot running water because if you overcook it or scorch it in the microwave or stove top it will taste funny.
  • The sauce has a very strong taste by itself, but once it's tossed with the pasta and veggies it is dee-lish!
